Do you know Japanese food “ shabu-shabu” ?

Shabu-shuabu is a kind of a hot pot. You soak raw and sliced meat of beef in hot water of a pot for a short time, and eat the meat with a special sauce and vegetable boiled in the pot, so less oil and healthy dish!




Today, I made salad with  shabu-shabu meat. Try it!


Ingredients( about for 2 persons)

Beef( paper-thin)…100g



Mesclun greens

White wine…50cc

A: grapefruit juice…2+1/2 Tbsp

A: olive oil…2 Tbsp

A: lemon juice…1 Tbsp

A: sugar…1/2 tbs

A: salt & pepper…a dash of




How to make:

1, Slice onion thinly, then take the time to sprinkle a little bit of salt over it, and drain the water it well.

2, Combine with A ingredients.

3, Soak raw and sliced meat of beef in hot water added white wine of a pot for a short time until it is cooked, then cool it with water with ice. Drain the water off it well.

4, Put drained onion, cooked beef into a plastic bag, and add combine A ingredients to soak and to knead them. Then, chill the bag in the refrigerator for 30min-1hour.

5, Peel each grapefruit segments, and chill the grape fruit and mesclum greens in the refrigerator.

6, Mix contents of the plastic bag, grapefruit, and mesclum greens immediately before eating, then, arrange them in a plate.

Ingredients( about for 2 persons)



Mesclun greens…20g

A: olive oil…1tbs

A: balsamic vinegar…1/2tbs

A: vinegar…1/2tbs

A: salt…a pinch of

A: coarsely ground black pepper…a dash of




How to make:

  1. Wrap the pumpkin with plastic wrap, then cook in microwave( about 2mins, at high…if it is not enough, make appropriate adjustments.)
  2. Cut the cooked pumpkin into bite-size pieces.
  3. String the celery, then cut it at an angle into thin pieces.
  4. Combine with A ingredients, then add the pumpkins and celery, mix them.
  5. Arrange 4 on the plate with mesclum greens.


That’s all! It is easy, tasty, and healthy!

July 7th night is Tanabata festival in Japan, so how about arrange your table for the night with this marinade?

Ingredients( about 4persons):

momen tofu…1(about 300g)

prosciutto…around 15sheets

asparagus…about 3

milling fineness rock salt…to taste

A: EV olive oil…120ml( 1/2 cup)

A: lemon juice…3Tbsp

A: sugar…1tbs

A: salt…1/2tbs

A: white pepper…a dash of

How to make:

1, drain the tofu well…in this time, to drain it, not using a microwave.

Layer 2 paper towels on top of one anoter, and wrap the block of tofu insaide. Lightly weight the tofu down, leave it for about 1-2 hours then drain until the thickness becomes about 1/2.




2, cut the drained tofu at the half of the thickness, then cut out with your favorite mold.

3, Add “A” into a bowl or something like that, and stir them well. Then, soak “2” with this marinade sauce for 1 night.

4, cut off asparagus’ bottoms, and peel them by peeler when their peels are hard. After that, boil them with a little salt, and let them cool down. Cut them half length, then, cut them lengthwise in 4 equal parts.

5, arrange the asparagus, prosciutto, and the tofu on the plate, then pour the marinade sauce and sprinkle the milling fineness rock over them.

Ingredients( for 2 persons):

Soft tofu( silken tofu)…1( about 300g)

Cherry tomatoes…3

Chinese parsley…a suitable amount

Slice of lemon…a suitable amount

A: grating garlic…1 clove of

A: nampla…3Tbsp

A: lemon juice…2Tbsp

A: sugar…1tbs




How to make:

1,Add “A” into a bowl, and stir them well.

2,Drain a tofu lightly, then cut it into eight equal parts.

3,Put them on a plate, then arrange the relishes in the order of: Chinese parsley, round sliced cherry tomato, lemon slices from bottom.

4,Pour “1” to “3”.

Today is also hot, so I made Summer roll(fresh spring roll).

This sausagetop photo’s  is red paprika, white radish sprouts(mustard and cress), sausage, and red-leaf lettuce!

Summer roll is not the Japanese food but the Vietnamese cusine, so can you get rice papers in your neighborhood? If you can do it, I highly recommend Sumer roll. It is easy, healthy, and delicious!!

stuffing…your favorite ingredients…vegetables, boiled shrimp, smoked salmon, etc…

rice paper…1 pack

A: red pepper…1

A: namplaa…2Tbsp

A: water…1Tbsp

How to make:

1, prepare your favorite stuffings…cut and cook them as needed, then drain off their water well to avoid soaking rice papers too much later.

2, Soak a rice paper in water one by one until soft. Not to soak too much!

3, Place the rice paper on a wet cloth, put ingredients in the center of rice paper.

4, Fold both sides of rice paper and roll up from the front. It is better to roll up tight.

5, make the dipping sauce; Remove red pepper seeds and slice them into circles. Add (A) and mix. Of course, you can use your favorite dressing or sauce!

It is also hot today. I had a craving for Sushi, so I went to a Sushi shop.

There was a report about the ranking of sushi topping in Japan appearing in newspaper a few day ago.

According that;

1, medium fat tuna

then, the list after the top 3 was as follows;

fattest tuna, sea urchin, salmon roe, young yellowtail, calamari, conger eel, fin of flatfish, and so on…

My favorites are turbot and salmon roe, by the way.

July is here. Let’s get through the hot summer by eating healthy food!

ingredients( about for 3-4 pieces):


potatos…230g ( about 2 medium potatos)

smoked slice of bacon…1 or more if you would like

potate starch( Thick soup )…2Tbsp

salt…a dash of

you can add chopped cannned tuna fish instead of the bacon!

Tofu steak with plenty of garlic and green onion(spring onion)

2, cut the bacon( or crumb tuna fish) into small pieces.

3,steam or boil potatoes in a pan or in microwave, then mush them in a bowl after peeling. Do not overcook when you cook them in microwave.

4, add bacons, drained tofu, potato starch, and salt into the same bawl. Mix them well in each time.

5,separate them into 3-4 pieces( if you would like smaller cake, you can separate them into more pieces), then press them about 1cm thick by using your hands.

6,Heat the cooking-oil in a grill pan over medium-high heat, then lay the (5), and cook them until each surfaces are grilled crisply.

5,you can put ketchup on cooked cakes if you would like!

I made chinese Dumplings, and I use tofu, soy sauce, and so on…so, their taste are a little Japanese!

ingredients( about for 2-4 persons):

dumpling wrappers…about 40sheets ( when you cannot get them, refer to “Ingredients for the dough” and “How to make the wrappers  below!)

minced chicken meat …100g

momen tofu…1(about 300g)

a bamboo shoot boiled plain…1/4

shiitake mushrooms…2

white leek…1

A: grated fresh ginger…1Tbsp

A: sake…1  Tbsp

A: soy sauce…1/2 Tbsp

A: toasted sesame oil…2tsp

A: salt & pepper…a dash of

A: potate starch( thick soup)…1.5 Tbsp

Ingredients for the dipping sauce:

vineger… 2 Tbsp

soy sauce…2 Tbsp

Chinese spicy sesame oil…suitabli if you can get it

How to make:

2, cut the vegetables…cut bumboo shoot, shiitake mushrooms (without the stone) and white leak into fine chopping.

3, Put meat, drained tofu, vegetables, and all “A” into a bowl, and mix them well.

4, While avoiding the edges of the dough, use a small spoon to place a teaspoon of filling into the center of the wrapper.

5, Press the edges of the dough together, forming a half circle. Put it on your working surface, pressing the bottom of the dumpling. Fill the remaining wrappers until you have about 30-40 dumplings.

6, Heat oil in a pan and saute the dumplings over medium-high to high heat, and do their bottoms brown.

7, Add water to the pan(soak up to the 1/4 height of the dumplings). Cover the pan over the dumplings and cook until the water is absorbed (3 to 7 minutes) over medium-high heat.

Enjoy them with the dipping sauce!

Ingredients for the dough:

wheat starch…1 1/4 cups(150g)

tapioca flour/starch or wheat starch…1/4 cup(30g)

boiling hot chicken broth…1 cup(240 cc)


vegetable oil…1 tsp

How to make the wrappers;

1, In a bowl, mix all the dry ingredients for the dough. With wooden chopsticks, stir in the boiling hot chicken broth and the vegetable oil.

2, Sprinkle wheat starch over a wooden cutting board or other appropriate kneading surface. When the dough is still hot, start kneading the dough until it becomes smooth. If the dough is sticky, you may need to add more wheat starch.

3, Cut the dough into 4 sections and roll each section into an 8-inch cylinder, using the palms of your hands. For this recipe, cut each cylinder into 8 pieces. Cover with plastic to keep the dough moist while you flatten each piece.

4, The trick to making the wrapper into a near-perfect circle is to sandwich the piece of dough between two pieces of parchment paper and flatten it using the bottom of a pan. Then you can use a rolling pin to roll them out more. You want your wrappers to be at least 3 1/2″ wide.

5, Fold 8 narrow pleats, where each pleat overlaps the previous pleat halfway. You should leave about 1/3 of the edge without pleats.

ingredients( about for 2 persons):



Tofu…1/2( about 100g-150g)

Basil…6-7 sheets

A: Grated cheese( like parmesan cheese)…4 Tbsp

A: EX olive oil…3 Tbsp

A: Vinegar…1 Tbsp

A: Soy sauce…1/2 Tbsp

Salt & pepper…a dash of

Grated garlic…suitably

How to make:

1, drain the tofu

2, cut the vegetables…cut tomatoes into large pieces, 1.5cm square dice cuts the cucumber, tear into pieces the basils by hands.

3,take the time to scrub the cucumbers with salt to bring them out the green and soften, then drain them well.

4, Put tomatoes, drained cucumbers, tofu and basils into a bowl, then mix them well.

Today, I want to eat lasagna, so I made the Japanese-style one. How about you, too?

ingredients( about for 2 persons):

Lasagna sheets,cooked al dente —-3 sheets


momen tofu…1(about 300g)

minced chicken meat …150g

tomto sauce… 1 canned( about 400g)

broth cube( chicken or vegitable)…1

salt & pepper… a dash of

oregano… a little

melt cheese …  suitable as you like

How to make:

preheat oven 190 degrees C

1, Drain the tofu: Wrap momen tofu with a paper towel. Heat tofu in microwave with a heat-resistant plate. To make it dry (500w 2mins30s,600w 2mins).

2, cut a eggplant into thin circular 5mm thick, then roast them on both sides in a pan with oil. Take them out once after roasted.

3, Heat the oil in a pan, and Brown meat,breaking any large lumps,until it is no longer pink, then add season with tomato sauce, broth cube, salt & pepper, and oregano. Continue to boil over low heat until all the liquid are gone.

5, Arrang the pasta sheet side by side, covering the bottom of the backing dish.

Evenly spread a layer of 1/2 eggplants, then a layer of 1/2 tofu, then a layer of 1/3 cooked meat.

6, repeat 5 one more.

7, Arrange the final layer of pasta sheet and top with met cheese.

8, Bake it until top os bubbling, about 8-10 minutes. In the middle of it, Line the dish top with an aluminum foil to prevent the burnt.
